Georgia On My Mind Salad

We moved into our new apartment last Saturday, and just as the final boxes were unloaded from the truck, a farm stand appeared in front of the building. Farm fresh produce, every Saturday and Tuesday!

I couldn’t keep my eyes off the peaches and rushed to snap one up for a post-moving snack. Peaches are one of my favorite fruits, and it doesn’t really feel like summer until they appear. In California, I loved going to the farmers market early to try each variety, looking for the sweet juicy ones for sorbet, or firmer jewels to caramelize.

And even though the best peaches I’ve had came from my California days (as do most of my spoiled produce memories), peaches still feel like a Georgia thang. I whipped up this salad a week after I returned from my latest trip to Atlanta. With boiled peanuts and the sweet peaches, it’s a Georgia On My Mind Salad ode to the state.  A little lime juice, cilantro, and red onion help brighten it up, some cubed radish give a spicy kick, and I love the nuttiness of the forbidden black rice. It’s a cool, refreshing summer salad, perfect for this roaring heat!

Georgia On My Mind Forbidden Rice and Peach Salad
Servings: 6 cups
3 cups black rice
4 cups water
1 cup salted peanuts
3 limes, juiced
1 cup rice wine vinegar
¼ cup sugar
5 small radishes, diced

2 peaches, diced
1 red onion, thinly sliced

1 bunch cilantro, minced
Chile pepper 

Place the rice, water, and peanuts in a large pot, cover, and bring to a simmer. Cook for 35 to 40 minutes, until the water is evaporated and the rice is cooked through. Spoon the rice flat onto a sheet tray to cool. Whisk the lime juice, vinegar, and sugar together in a bowl. When the rice is cool, combine the rice with the radishes, peaches, onion, and cilantro, and fold in the liquid. Season to taste with salt and chile pepper.
