Weekend Inspiration: Celebration

My birthday was yesterday, which meant this week included plenty of celebrating. I’m one lucky (spoiled) gal: TH took me out for dessert and Champagne, on a jazz boat cruise, out to a fancy dinner at Aldea, and to a hilarious show at the Comedy Cellar. Tonight we are celebrating with friends with a barbecue in our new apartment. I’ve got sausages and beef brisket from our meat CSA, Jersey corn from the produce stand, and a peach upside down cake all in the works. I can’t wait!

And when I saw these Champagne & Popsicle treats a few weeks ago on Glitter Guide, I immediately marked them for my celebration. Nothing says celebrate better for me then a little bubbly, and topped with a sweet pop, it’s the perfect summertime spritzer as well. The pink lemonade pops are as pretty to look at as they taste and lend a bright sweetness to the drink. Wether you make your own popsicles or purchase them (I’ve been itching to finally try People’s Pops now that I’ve landed in a New York City summer), go for fruit juice rather than yogurt-based. It’s as easy as adding the juice with a little sugar, freezing, and topping with Champagne. Cheers!
